Go Cougars and Sinless Pancakes

Dave and I scored sweet tickets to the BYU vs Utah State game this weekend. I love going to football games but I love it even more when the tickets are free! The game itself wasn't the most exciting game I've ever been to but it was fun to be in the stadium with all the bright lights and cheering fans, there's so much energy it's nuts.

Since it was conference weekend we spent the rest of the weekend, at home, organizing our upstairs. For breakfast both mornings we tried these yummy super healthy pancakes. I was a little hesitant to try them because the ingredients are so odd. So weird in fact, I made Dave stay out of the kitchen so he didn't know what was in them. He is pretty honest about healthy food and whether it tastes gross or not. Well, I can tell ya he loved them!

Most people have a hard time getting enough protein into their diets and this makes it easy to get lots of protein without all the calories. Try the pancakes yourself and see what you think. They have a delicious cinnamon taste and the texture is just like a regular pancake. Dave and I doubled the recipe and that was plenty for the two of us.

Sinless Pancakes:
1/2 cup low fat cottage cheese
1/2 cup oats
(I use "Old Fashioned Quaker Oats")
3 egg whites
2 packets Splenda
(If you're opposed to artificial sweetener, use sugar. It will alter the calorie count)
Splash of Vanilla Extract (I use about 1 teaspoon)
Sprinkling of Cinnamon
(about 1/2 teaspoon)
pinch of salt (my addition...I find it boosts the flavor a bit)

Combine all ingredients in a blender or food processor and blend until smooth. Cook on a hot griddle, sprayed with non-stick spray.

We left the sugar out and didn't miss it. Another tip is if you don't want to separate the yolks just leave them in and do 2 eggs instead of 3. She doesn't usually post healthy recipes but she has a lot of other recipes that look divine.
